Fueled by a passion for the world's finest cocoa, Domori embarked on a mission to preserve the diversity of this precious resource while respecting nature and humanity. Their approach involves careful cocoa selection, small-batch roasting, minimal processing, and some handcrafted operations, resulting in uniquely genuine chocolate. Notably, Domori is recognized for its groundbreaking work, such as being the first to use Criollo cacao, controlling the supply chain from South and Central American plantations, and creating a Chocolate Tasting Code for exploring cocoa nuances. With a focus on the rare and pure Criollo cacao, Domori's commitment to quality and environmental responsibility shines through every bar they produce.

    Aristide 70% Couverture Discs have notes of tropical fruit, papaya and roses. These notes are showcased by the cacao's low bitterness and astringency, and a delicate cocoa note.

    Aristide is a cacao from Nkog Ekogo, a village in the north of Yaoundé, the capital of Cameroon. These couvertures are named after Aristide Tchemtchoua, Chairman of the ScoopsCa cooperative of the Nkogekogo plantations, which groups together 100 cacao farmers, each owning about 7.4 acres, i.e. 740 acres in total, on which 2 varieties of cacao are grown: the Forastero and the Trinitario.

    The harvest is done by hand and fermentation takes place in wooden crates covered with banana leaves and stirred regularly. Fermentation of this type of cocoa lasts 6 days.
