Have you ever wondered what is in our Chocolate of the Month clubs? This month we are giving a sneak peak into what our subscribers are receiving. Each chocolate club this month received some if not all of the bars listed below.
Every month we strive to send out palate pleasing selections that are sure to expand your chocolate horizons. Along with the chocolate we also include an information sheet with tasting notes and a brand highlight.

Gallette
We had the pleasure of meeting Gislaine Gallette in November 2018. What a delightful experience we had meeting this sweet woman, the founder of Gallette Chocolates, who is quite passionate about making chocolate!
After realizing that her initial career choices were not her calling, Gislaine studied chocolate making first in Brazil and then by taking advance courses in Belgium. Following Gislaine's studies, Gallette Chocolates was started and continues now in São Paulo Brazil.
Today Gislaine and her husband Hamilton work together in their family-run business. From bean-to-bar chocolate to beautiful and delicious filled chocolate truffles and bonbons, Gallette Chocolates are of the highest quality, made with sustainability, social responsibility, and fair labor practices in mind. Chocosphere offers Gallette's chocolate bars now. We hope to be able to expand our offerings in the future.
Huila 65%
Fine chocolate produced with cocoa from the Huila department (region) of Colombia. Deliciously balanced sweet and sour flavor with citrus & floral notes, where the acidity combines with the aroma of cacao for a simply delicious result. Ideal for those seeking a balance of flavor and aroma in their chocolate
Bahia Catango 65% Chocolate Bar
Produced with Catongo-type, the fruit of a spontaneous genetic mutation. This cultivar produces lighter, softer cacao pods, resulting in a chocolate with a color that gives the impression of being a milk chocolate. It presents notes of almonds and walnuts.
Bahia Forastero 70%
This bar has notes of intense earthy and citric flavors. Its distinct flavor is known as the "Taste of Bahia".
Tumaco 85%
Produced with cocoa from the Tumaco area in southwestern Colombia. A high-personality chocolate with a well defined aroma. Bitter, vigorous and with a subtle sweetness, combined with floral and fruity notes to provide maximum cacao expression in an intense chocolate.
Bahia 40% Milk
Crafted bean-to-bar from fine trinitario cacao. Having soft and delicate flavors, it's a perfect combination for a creamy milk chocolate.
Burnt Caramel & Nibs 40% Milk Chocolate Bar
Chocolate bean-to-bar with cacao nibs and burnt caramel. Produced with trinitario cacao, it has notes of intense caramel flavor and a lot of crunchiness.
Pura Delizia
Vietnam 68%
An explosion of cacao fragrance, enriched with citrus, red fruit and wood tasting notes. A special chocolate with a great deal of character.
Slitti
Latte Nero 45% Milk
Lattenero is a top quality milk chocolate, where every single aromatic flavor of the cocoa is enhanced. The perfect balance between cocoa, milk and sugar makes it a unique product in its genre.
