    Kokoa Kamili is a central fermentary that works with approximately 1500 small shareholder farms in the Kilombero Valley of Tanzania, most of which range in size from just 0.5–2 acres. In an area that historically received some of the lowest prices for cocoa in the country, Kokoa Kamili is now paying a premium well above market rate to the farmers for wet cacao, and controlling the post-harvest processing themselves. This results in higher compensation and a reduced workload for the farmers, and ultimately produces a more consistent, high quality product.

    The Pueblo of Santa Ana is a Native American tribe with reservation lands that include a strip of New Mexico's fertile Rio Grande valley. The members of Santa Ana have lived just north of Albuquerque, New Mexico, since at least the early 1500s. Agriculture has been central to the survival of the Santa Ana community for over 500 years. Blue corn, the most treasured grain of Pueblo tribes, is the prominent crop of Santa Ana. The Tamayame people not only grow the corn, but also operate a stone mill to create several products under the brand name Tamaya Blue.

    This bar is inspired by the traditional corn and masa-based beverage Atole of Mesoamerican origin, where toasted corn or masa is blended with water or milk, piloncillo (unrefined cane sugar), vanilla, and optional spices, fruits, or chocolate. The consistency of this beverage can range from a thick porridge to a thin liquid. Here the blue corn has been refined into a traditional white chocolate that retains just enough texture to enhance the perception of the delicate and floral qualities of the heirloom corn.

The region has historically been afflicted with unrest from narco-trafficking and the presence of the Shining Path militant group. Ucayali River Cacao has partnered with USAID and Alianza Peru to give local farmers access to an alternate market to cocaine. Working with around 400 smallholder farmers with one to three hectares of land each, Ucayali River Cacao buys wet cacao at a premium price. They have worked with Daniel O’Doherty of Cacao Services to hone their fermenting and drying processes. There are three groups of cacao that can be found in the Ucayali region: various Trinitario clones, CCN-51 and what the locals call “comun”. The comun varieties are similar to Trinitario, lower in bitterness and astringency. Ucayali River Cacao purchases only the comun and Trinitario clone varieties. (meridiancacao.com)
