Ucayali River Cacao has partnered with USAID and Alianza Peru to give local farmers access to an alternate market to cocaine. Working with around 400 smallholder farmers with one to three hectares of land each, Ucayali River Cacao buys wet cacao at a premium price. They have worked with Daniel O’Doherty of Cacao Services to hone their fermenting and drying processes. There are three groups of cacao that can be found in the Ucayali region: various Trinitario clones, CCN-51 and what the locals call “comun”. The comun varieties are similar to Trinitario, lower in bitterness and astringency. Ucayali River Cacao purchases only the comun and Trinitario clone varieties. (meridiancacao.com)

  15. Domori Criollo Porcelana 50g Bar

    Domori Criollo Porcelana 50g Bar

    Dark Bittersweet 70% cacao, Venezuela

Porcelana is an extremely rare and precious plant.

Grown in the Andes since antiquity, it was rediscovered and grafted by Domori in the late 90s, in their Hacienda San José plantation in Venezuela. The name comes from the translucency of its green or red fruits, making them look like porcelain. The beans are oval with a completely smooth surface. Porcelana is also one of the most delicate cacaos: once ripe, the fruits become prey to insects and fungi.

The chocolate crafted from this variety has notes of hazelnuts, cream, vanilla, and bread crust. The lack of acidity enhances its sweetness and roundness.

    70% Cocoa, 1.76oz/50g net wt.
