What's New?

Valhrona

Valhrona always makes delicious chocolate. But this year the gift boxes are especially beautiful.  The "66 Chocolats Grand Crus" gift box that many of you may have been waiting for is due to arrive in just a few days from this writing, making this offering complete.  Also, a new shipment of Valrhona's spectacular Single-Estate Bars are due to arrive at the same time!

Dolfin

We have 8 new dolfin bars with mysterious flavors like Nougat, Honey & Kashmir Diamond Salt or Grilled Pistachio & Punjab Pink Salt.

Domori

Domori Porcelana is back after a long absence (making it almost new)!  Rare and superb, this bar is not to be missed.  Also, try the new Trinitario blended-origin bars and squares, in cacao percentages ranging from 70% to 100%.  The Trinitario Peru and Tanzania (formerly Apurimac and Morogoro) bars have a new and beautiful design on the package, and the chocolate taste is as pure and characteristic as you would expect from Domori.

Offering two new bars, Piura Malingas 75% from Peru and Arhuaco Businchari 82% from Columbia. Hints of sweet spice, liquorice and sesame rise gently in this ultra rare chocolate made according to ancient Arhuaco tribal traditions that are designed to maintain the world’s natural harmony.

Creo

Creo Chocolate Company is a small family-run bean-to-bar chocolate making business close to home in Portland, Oregon.  They make excellent chocolate!  Try three new types of sipping chocolate, all 73% cacao, in a very attractive recloseable tin perfect for gift giving and too delicious to miss.

Chocolove

Holiday Dark Chocolate Bar 3.2oz. Sweet currants, tart cherries, zesty orange and spicy ginger complement a mix of crunchy pecans, walnuts, and hazelnuts enrobed in dark chocolate. This classic combination is inspired by the popular holiday chocolate in France known as mendiant. Kosher-Dairy.


Recipe Corner

Chocolate Truffles

Ingredients

  • 1 cup Heavy Cream
  • 2 cups Callebaut Dark Chocolate
  • 2 Tbsp. Orange-flavored liqueur
  • 1/2 tsp. Vanilla Extract
  • Confectioner's Sugar, Cocoa Powder or Finely-chopped Nuts for garnish

Directions

Heat cream until steaming; do not boil.

Add chocolate to a heatproof mixing bowl. Pour cream over the chocolate and let sit for 20 seconds to melt chocolate slightly.

Slowly whisk cream and chocolate together, until incorporated, about 2-3 minutes.

Continue mixing slowly, adding liqueur and vanilla until incorporated. Let the mixture sit for at least 1 hour.

When firm, use two tablespoons, one to scoop the chocolate and the other to push it onto a baking sheet lined with parchment paper. Wearing latex gloves, roll truffles with palms of hand to create a round ball. Do not handle truffles too long or they will soften.

Roll truffles in cocoa powder, confectioner's sugar or chopped nuts to finish.

And when you need help, we are here for you. There is generally someone answering the phones between 8:30am. and 4:30pm. Pacific Time, Monday through Friday, with the exception of commonly observed holidays.

There are five of us answering phones at Chocosphere, where we speak fluent Chocospherian. We try hard to answer all calls personally during normal business hours, but occasionally one slips over to voice mail. If you call and end up in voice mail, please leave a message. We will do our very best to call back promptly. If by chance you don't hear back from us in a reasonable time, please call again during our normal business hours.

We each have varying levels of experience. It is our goal to happily serve you the very best chocolate!!

If you're ordering for holiday delivery, please take note of ordering deadlines so we can get the chocolate to the right place at the right time. You can also find a link to our holiday shipping deadline page inside an information bloc shown at the top of the Chocosphere home page and the top of the checkout page.

Finally, and very importantly, our web site lists our service commitments as to when we ship an order based on when the order is placed. However, we certainly understand there are circumstances where you may want us to process an order faster, when you need your chocolate “now”! If you need your order shipped faster than our listed service commitment, please place your order online letting us know of your need in the “Comments” section, and then call us (503-692-3323 x 0 for Customer Service) to let us know. We can't guarantee early shipping, but we always try hard to provide chocolate happiness to our valued customers.
