Ritual Chocolate

Ritual Chocolate handcrafts small batch, bean-to-bar chocolate using classic European methods with a modern American style in Park City, Utah. Founded in 2010 by Robbie Stout and Anna Davies, their mission is to produce exceptional quality chocolate while celebrating the complexity of the cacao bean.

    Ritual Chocolate Company worked with the non-profit organization Enliven Cacao, that sources high quality cacao from La Colonia, Nicaragua, to produce an excellent, two-ingredient, single origin chocolate. Only one batch of this 70% cacao single origin chocolate was made. This chocolate is very well balanced with notes of dried fruit, nuts, coffee, and a fair amount of earthiness. 60g / 2.12 oz per bar.

    More about the cacao in this chocolate bar: Enliven cacao sourced a varietal blend originating from the North Central Mountains of Nicaragua for this limited edition bar. Processing is done with organic methods and single source beans are harvested by cacao farmers in and surrounding La Colonia, whom have been growing cacao for generations.     Ritual Chocolate Company recently released their Trinidad, Jagassar Estate Limited Edition Microbatch dark chocolate bar. This bar is particularly special as the story of the origin is interesting and the flavors are unique and delicious. Because of unique conditions during the growing season, only three bags of this particular cacao were harvested from the Jagassar Estate. Ritual Chocolate purchased all three bags, and with a great deal of care created this very special chocolate. The Trinidad Jagassar Estate Microbatch bar has deep, dark and rich flavors with notes of fudge, brazil nut, toast and dates. Though this single-estate / single harvest bar is 80% cacao, it exhibits a very pleasant and balanced sweetness that could possibly make it one of your favorites.     Made from cacao nibs that are aged in bourbon whiskey barrels. This is by no means a whiskey flavored chocolate, but the flavor of the whiskey is detectable.

    This chocolate is made with a blend of cacao nibs that are aged in High West Distillery bourbon whiskey barrels for several months. This process provides subtle notes of the charred, white American Oak and light hints of bourbon whiskey. Aging the nibs in a fresh whiskey barrel has an interesting affect on the final flavor of the chocolate. This is by no means a whiskey flavored chocolate, but the flavor of the whiskey is detectable. What really stands out is the "mellowing" effect of the oak whiskey barrel. The chocolate tastes a bit "softer around the edges" and has a pleasant aroma and aftertaste. Due to this unique aging process, this chocolate is extremely limited. High West is one of the whiskey distilleries in Park City, Utah and is the go-to whiskey for those who want a little taste of the high mountain west. 60g / 2.12 oz per bar.

    The Soconusco cacao growing region has a chocolate history that is as rich as its flavor is today. This area was one of the main cacao producing regions for the Aztec empire and it’s quality was considered to be the most valuable by the colonial Spanish empire. This chocolate is made with cacao from the Rayen Cooperative, which is a new organization of cacao growers that are focused on quality and continuing the reputation of the Soconusco region as a strong cacao source. This is a region that we have been interested in ever since we began making chocolate because of its unique history and fabled quality. One's first impression of flavor of this origin is extreme nuttiness (imagine the nuttiness of Madagascar chocolate but without all the fruit). There’s a bit of citrus in the flavor, but it definitely takes a backseat to the upfront nutty, woody and chocolate flavors. This coop is extremely small, which means that supply of this origin will be limited. 60g / 2.12 oz per bar.
