Republica del Cacao

Republica del Cacao was born from a vision to rescue and develop the famous "Cacao Arriba" from Ecuador, also known as "Nacional Fino de Aroma". Today Republica del Cacao purchases this high quality variety locally in Ecuador. They have long sought for new Latin American origins to add to the variety of tastes they offer, exploring from the Andes region and the Upper Amazon (the terroir of the oldest cocoa known to man) to the Caribbean islands. The goal is creation of the best chocolates with the finest origin cacao from different Latin American countries: Ecuador, Peru, Colombia and the Dominican Republic.

This delicious high quality chocolate is made from natural, non-GMO ingredients, with a commitment to helping the local economy and Ecuadoran farmers. For example, all the milk and sugar used in the chocolate comes from Ecuadoran family farmers, which is unique in the chocolate making craft.

All factory sealed packages are O-U certified Kosher.

    Peru is still a relatively unknown origin, but offers a wide range of cacao tastes and styles. Cacao farms are often planted with Criollos and are very well maintained, yielding exceptional fruits. Peru 62% is a light mahogany colored chocolate prepared with fine Criollos from the north west of Peru.     This is a powerful and long lasting chocolate. Fruity, toasty and a little spicy, with notes of natural vanilla. At first it displays some acidity followed immediately by notes of tropical and candied fruits. Its powerful structure gives it a long lasting finish.
    “Panela”, a traditional organic brown sugar produced in the jungle near Quito by local sugar cane farmers, bursts into the chocolate and complements its final taste of nuts.
