Sibu Chocolate began in Costa Rica in 2007, founded by historian Julio Fernandez Amón and journalist George Soriano with a shared vision of creating exceptional chocolate inspired by their homeland. Despite launching during the 2008 recession, they pursued their goal of producing organic Costa Rican chocolate capable of rivaling the world's finest. Through extensive research and specialized chocolate training, they developed relationships with suppliers of high-quality, organically produced cacao.

Inspired by unusual flavor combinations and Costa Rica's rich cultural heritage, Sibu expanded from distinctive bonbons into chocolate bars and a wider range of confections. The brand is recognized for its creative flavor pairings, eco-friendly packaging, and designs inspired by pre-Columbian art.
